What's black garlic?
Black garlic is fermented garlic (Allium Sativum), also called aged garlic, aged garlic extract or black garlic. In ancient times, garlic was used for general health and was one of the most important remedies against all kinds of diseases. Today, trend setters use fermented or black garlic as a seasoning and to bring colour to a plate in a surprising way.
Fermented or black garlic is more powerful than raw garlic and easier for the body to digest. The fermentation process transforms the allicin in raw garlic into S-allylcysteine. As a result, black garlic has an almost double antioxidant effect and the antioxidants are better absorbed.
Because of the fermentation process, it no longer has the smell of garlic or the sharp taste of raw garlic. Black garlic gives a sweet, intense flavour to dishes.
