Seitan Shoyu Protein Steak is a wheat seitan steak with shoyu sauce

What is shoyu?

Shoyu refers to shoyu sauce, which is another name for Japanese soya sauce. Japanese soya sauce contains less salt than its Chinese counterpart because it is made of equal parts of wheat and soya beans.

The shoyu sauce that Bertyn uses for its Shoyu Protein seitan steak is, just like the seitan itself, made according to traditional methods using an age-old Japanese recipe. Whole soya beans are cooked and mixed with crushed wheat, after which the mixture is enriched with a culture of fungal spores, called Koji. The process takes 3 days, after which the sauce is left to mature in cedar barrels for 15 months. It is during this fermentation process that the delicious flavour and aroma of shoyu arises. When the shoyu or soya sauce is ready, the sediment is removed from the sauce by pressing it through cloth.

The traditional way of preparing it and the length of the fermentation process mean that Bertyn’s shoyu is of a superior quality and easy to digest.

How does Bertyn use shoyu sauce?

Bertyn uses the shoyu sauce as a marinade to add even more flavour to its Shoyu Protein Steak (300 g). The same shoyu is also used for its Shoyu Protein Blocs: 550 g and 1,000 g, as well as for the seitan Shoyu Protein Steak with vitamin D. The blocks are not as marinated because they are larger than a steak and when soya sauce is used as marinade, it only adheres to the outside of the seitan. You can cut the seitan blocks into slices, strips or steaks of any thickness or size you require.

  • Fry or grill the Shoyu Protein Steak
  • Remove the pan from the heat and add the remaining shoyu sauce.
