Passata di Pomodoro: strained tomatoes from Italy
Passata, the Italians' favourite. This thick sauce is made from pureed tomatoes that have been stripped of seeds and skins. The organic tomatoes grow on Gargano, a mountainous peninsula in the province of Foggia, also known as the 'spur' on the Italian boot.
BioOrto passata as a base for organic tomato soup and tomato sauce
Passata is a good base for soups and traditional sauces, due to its sweet and creamy texture. Aside from the sultry Italian sun, the only ingredients are fresh water and a pinch of salt. Tomatoes are rich in minerals and vitamins A and C, and have high levels of lycopene, a powerful antioxidant.

Veggie wraps with eggplant and tomato sauce recipe
INGREDIENTS
2 eggplants
2 handfuls of rocket
4 wraps
1 jar of passata
2 handfuls of grated cheese
olive oil
pepper
salt

PREPARATION
Cut the eggplant lengthwise, into slices of about 1 cm thick. Sprinkle some olive oil, salt and pepper over the slices and grill them in the oven for about 20-30 minutes. Spread the passata on the wraps and sprinkle some grated cheese on top. When the eggplant slices are ready, place them on the wrap. Now just add some extra cheese, rocket, salt and pepper and then roll up the wraps. Secure them with a skewer or toothpick and you're done!
