In the north of Apulia, these sun-ripened organic tomatoes are harvested and selected by hand. They are then halved, salted and carefully dried under the Mediterranean sun. The tomatoes are then marinated in extra virgin olive oil with lots of basil.
The sun-dried tomatoes from BioOrto are delicious as antipasti, in pasta dishes or in a typically Italian panino (sandwich) with rocket and buffalo mozzarella. Because the tomatoes are stored in a beautiful retro-looking glass jar, their quality is preserved.
INGREDIENTS (2 pers.)
2 white bread buns
2 tbsp green pesto
100 gr of sun-dried tomatoes
1 buffalo mozzarella
10 gr of capers
25 gr of Parmesan cheese
10 gr of rocket
Cut the unbaked buns in half. Spread a thin layer of pesto on both sides.
Dress the bottom half with the sun-dried tomatoes and mozzarella. Top it with the capers, grated cheese and rocket and cover it with the top half. Bake the panini on the grill until the cheese has melted and the bread is golden brown.
