Khoisan fleur de sel is filtered by Mother Nature. On the west coast of South Africa, where it originates, the ocean water seeps through an underground 2,000-meter-thick barrier of limestone, quartz sand and shell beds. This permeable layer of the earth (or aquifer) naturally filters the seeped ocean water. This underground salt water is pumped up in shallow salt pans. Here it gets life force, solar energy and regenerative power. The Bovis value of Fleur de Sel is between 16600 and 24700. Significantly higher than Himalayan salt. It is harvested by hand, dried and vitalized in the sun.
95% of the crystallizing salt sinks to the bottom. That's the sea salt. But when conditions are ideal, when the South African summer sun is at its hottest, 5% of the salt crystallizes at the water's surface into beautiful "flowers of salt" . Before this salt layer can sink, these scarce and precious floating crystals are handmade. Only 1kg per 35 square meters.

This sea salt comes from a small family business where about 13 full-timers have a permanent job. When the harvest season is over, 10 more seasonal workers are added. A Fair Trade fund pays the school fees for the children of the permanent employees. The same fund also invests in educational programs related to co-workers and health and safety. All employees receive a fair wage which is well above the minimum wage in South Africa.
