Rrraw made their "Cook it Rrraw" range especially for home chefs who also want to try their luck with the raw materials that Rrraw uses for their successful chocolate bars—the "grand cru" raw chocolate.
Baking chocolate is a cocoa mass extracted from cocoa beans. Rrraw peels the raw cocoa beans, after which they fall apart into pieces, or cocoa nibs. Together with a small amount of cocoa butter, the raw cocoa nibs are then finely ground with a millstone in a cold process. This creates something called cocoa mass, which can be further processed into cocoa powder and cocoa butter.
For the production of cocoa butter, the mass is pressed under high pressure, which produces cocoa butter and a hard brown cake. When this cake is broken, ground and sieved, cocoa powder is produced.
Thanks to the cold process without roasting or boiling, all the aromatics and nutritional benefits of raw cacao are preserved.
Raw cocoa beans are full of healthy nutrients. Regular chocolate doesn't have these nutrients anymore, because they are largely lost when the beans are roasted. Raw chocolate doesn't require the beans to be roasted. As a result, raw chocolate contains 4 times more antioxidants than roasted chocolate. It is therefore highly recommended to eat raw cocoa or use it in your dishes or desserts.

Tips | Melt some raw cocoa mass au bain marie. Stir in some gooseberries. Spread the mixture on a piece of aluminium foil and let it harden in the refrigerator for one hour. Now you have made your own super food chocolates! |
