Tahini is a smooth paste made from unhulled sesame seeds, roasted at a low temperature and finely ground. It’s a pure, organic sesame paste with a rich, nutty flavour, and it’s delicious as a base for dressings and sauces, particularly when combined with miso. Tahini is also great in baking, breakfast and smoothies. Or you can use it as a replacement for butter or peanut butter on bread or crackers. If you have a nut allergy, you’re trying to eat a lactose-free or low-carb diet, or you’re vegan, choose tahini. And that layer of oil? Just stir it in.
The word ‘tahini’ originally comes from the Arabic word ‘ṭaḥīnīa’, derived from the verb ‘tahan’, which means ‘to grind’. Well-known dishes that contain tahini include hummus (chickpea purée) and baba ghanoush. As well as the Middle East, tahini is particularly popular in North African countries and in Greece. Tahini as a product was first discovered in an old Arabic cookbook around the year 1300 AD.
Sesame seeds are well known to have high nutritional value: they’re a great source of protein, high in fibre and rich in phosphorus, calcium, magnesium, iron, selenium and potassium. Tahini also contains vitamins A, B1, B2, B3, B5, B6, B11 and B15. Two tablespoonfuls of sesame paste contain up to 5 grams of protein and 3 grams of fibre.

Preparation
Squeeze the lemon and finely chop the garlic. Set aside 2 tbsp of chickpeas. Use a stick blender to purée the rest of the chickpeas with 5 tbsp water and the lemon juice, tahini, garlic and salt until you have a smooth paste. Scoop the hummus onto a flat dish and smooth it into the desired shape with the back of a spoon. Drizzle the olive oil over the top and sprinkle with the reserved chickpeas and the paprika.
