Kombu from La Patrona: dried seaweed from Spanish coastal waters

Kombu (Laminaria ochroleuca) is a brown seaweed with elongated, thick blades and an intense flavor. La patrona's kombu comes from Rías Baixas, a coastal region in southern Galicia . Kombu contains iodine, calcium, potassium, magnesium, iron, sodium, chromium, protein, mannitol, phosphorus, alginate, fucoidan, laminarin, carotene, germanium and phytohormones. It also contains vitamins A, C, D, E, K and B complex. After nori, kombu is the most commonly used seaweed in Japanese cuisine.

Use

Soak in lukewarm water for 10 minutes or cook for 30-40 minutes (no need to soak if used for cooking).

How to cook:

Once rehydrated, use it as a fresh vegetable. Ideal in stews, soups, broths. Use the cooking liquid for soups and sauces. Also in salads, baked or fried. Use the leaves as sheets of pasta to make lasagna.
