Kombu (Laminaria ochroleuca) is a brown seaweed with elongated, thick blades and an intense flavor. La patrona's kombu comes from Rías Baixas, a coastal region in southern Galicia . Kombu contains iodine, calcium, potassium, magnesium, iron, sodium, chromium, protein, mannitol, phosphorus, alginate, fucoidan, laminarin, carotene, germanium and phytohormones. It also contains vitamins A, C, D, E, K and B complex. After nori, kombu is the most commonly used seaweed in Japanese cuisine.
This nutritious sea vegetable is a perfect flavor enhancer with that typical umami taste. This is due to the high content of glutamic acid. Kombu is ideal in stews, soups, broths and salads. And also through stews, fish, seafood, sauces and the like. Kombu naturally contains a lot of iodine, so pregnant women, people with thyroid disease and children can be a little careful with this type of seaweed.
The various seaweeds are harvested by hand in the Galician estuaries, washed, dehydrated and packed by La patrona in biodegradable packaging, free of plastic. Harvesting is done on foot or by diving at a shallow depth and using a boat. The algae are cut off, leaving the rhizoid (root) so they can continue to grow. This seaweed is fully certified organic.
