Product Description

Matcha – Premium HORAI

Premium HORAI is an organic Japanese matcha to enjoy at special moments. The tea is irreplaceable and essential in the matcha assortment of a true green tea lover. Much like Super Premium TEN, Premium HORAI is a matcha to prepare as koicha.

As koicha – thick, green tea – the Premium HORAI is best able to shine. The colour is bright green; the scent is grassy and the taste has umami. For those who prefer to experience the consistency of regular tea, you can prepare this tea as usucha as well.

Koicha vs usucha

There are two ways to prepare matcha: as a thin (normal) tea, or as a strong, syrupy, thick tea. Koicha is matcha prepared as a thick tea. Usucha is matcha prepared as a thin tea, whisked with the chasen to avoid lumps and to obtain an attractive foam layer.

The preparation of matcha as koicha is only recommended for matcha of superior quality that promises to have a soft, deep flavour, such as the Premium HORAI. Matcha of inferior quality is too bitter to be prepared as koicha.

Premium HORAI is therefore matcha to drink, not to use in dishes. If the name “HORAI” can be any indication, the tea reflects Japan’s essence: HORAI is the old name of the group of Japanese islands. It would be a shame to ruin the flavour of this matcha by blending it with other ingredients.

Have you already enjoyed Ceremonial AKASHI and you’re ready to try a different, superior matcha? Or are you simply curious? Premium HORAI will exceed your expectations. Aiya was the first to import matcha into Europe and makes only 100% organic Japanese green teas. As a matcha producer, Aiya has more than 125 years of experience in the production of high quality Japanese green tea and matcha. This you can taste.

Usage

For the preparation of Premium HORAI as usucha

  • Gently boil soft water (soft water = mineral-free or low water)
  • Take half a teaspoon of matcha (approximately 1 gram)
  • Add 80ml to 1dl water of 80°C
  • Whisk the matcha using a chasen till it is a foamy mass (+link). This takes about 15 seconds.

Matcha is also sometimes referred to as the ‘espresso amongst teas’. For this reason, a chawan is never filled to the brim, but often also has no more matcha tea than the amount of two fingers.

For the preparation of Premium HORAI as Koicha

  • Gently boil soft water (soft water = mineral-free or low water)
  • Take two teaspoons Premium HORAI matcha (approximately 4 grams)
  • Add 15 to 30ml water of 80°C
  • Begin with adding a few drops of water and use the chasen or matcha-whisk to mix the water with the matcha.
  • Mix the remaining water with the matcha

100% organic Japanese matcha, powdered green tea

Make sure that the water temperature whilst preparing matcha is not too high. The recommended temperature is 80°.

Water that has just reached its boiling point can be cooled down to 80°C in two ways:
-Leave the kettle to cool down for 10 minutes with the lid open.
-Pour the boiling water into another bowl 4 times, alternating between 2 bowls. Each time the water is poured into another bowl, it loses 4 to 5°C. By doing this you can also warm up the chawan(s) you intend to use.
