The secret of this extraordinary dark chocolate lies in its name ‘Nacional Blanco Acriollado’. ‘Blanco’ means white and refers to the white cocoa beans that are used to make this vegan chocolate.
The white cocoa bean is expensive and is exceptionally found is certain parts of the world. It is a mutation that can only arise when the cocoa trees have lead an undisturbed life for hundreds of years.
These beans are absolutely not bitter, because they have an unusually low level of anthocyanins. Anthocyanins are flavonoids that provide reddish-brown to purple colours in vegetables, fruit, leaves.
Nacional Blanco Acriollado is, therefore, a pure dark chocolate without the typical bitter taste of dark chocolate.
