These noodles consist of 95% buckwheat and 5% sweet potato. With regards to taste, they fit perfectly with the savoury umami flavours of Japanese cuisine. Buckwheat has been a popular gluten-free product for centuries. It is a typical Eastern pasta that is easy to digest and versatile in use. Buckwheat noodles taste delicious in combination with miso (soup), seaweed, and Japanese flavours such as tamari, mirin and sesame oil, or in vegetarian dishes with tofu and egg.
Bring a pot of water to the boil. Add the noodles until they are completely soaked in the water. Bring back to the boil and then put the fire on half power. Cook for 3-4 minutes. Drain the noodles in a colander and rinse with cold water.
