This organic, traditional bread, which is also known as Essene bread, contains only spelt and water – no yeast, leavening or other ingredients. Sprouted grain bread is made by leaving spelt grains to sprout for 2–3 days before baking them at a low temperature (110–130°C). This ensures maximum retention of nutrients and fibre.
Essene bread owes its name to a recipe created by the Essenes, a religious brotherhood from around the time of Christ who strove to live as clean a life as possible. The original recipe contained only one ingredient: sprouted wheat. This was shaped into flat round cakes, which were laid on stones to dry in the sun.
Sprouted grain bread has a very robust texture and is particularly nutritious, because it’s so rich in fibre and protein and so easily digestible. A slice of bread measuring 5 x 10 cm weighs at least 400 g. One modest slice will easily fill you up. It’s good for a strong start to the day, a simple and responsible lunch or a powerful pick-me-up before or after exercise.
Makes yummy toast. If you’re vegan, try putting a few slices of avocado with hemp seeds on your slice of fresh sprouted grain bread, or mugi miso with cashew butter. Or for a sweet version, spread a mixture of peanut butter and maple syrup on a slice of sprouted grain toast.
Sprouted spelt bread is free from yeast, leavening, salt, sugar, eggs and milk products.
Once opened, it will keep for 3 days in the fridge.
