Enjoy an uncompromising decaf experience with the new 2025 harvest of our Mexico Santa Fé coffee, an exceptional organic decaf coffee from the Chiapas region of Mexico. Although this specialty coffee is decaf, it offers a palette of rich, gourmet flavors. Let yourself be tempted by the gourmet notes of sugarcane, milk and hazelnut chocolate, and dried fruit.

This decaf coffee comes from the Motozintla region in southern Mexico. It is a blend of varieties—including Catimor, Sarchimor, and Red Caturra—and is the work of Jorge Arreola Nava. After harvest, the cherries are dried on a patio and then in a mechanical dryer before being decaffeinated using the natural Mountain Water process, developed by the Mexican company Descamex, the only company in the country that uses water for decaffeination.

The coffee is first exposed to steam, then submerged and filtered to remove the caffeine, after which it is dried for four hours and cleaned. This method, which uses no solvents or chemicals, fully preserves the aromatic molecules and the integrity of the flavors, resulting in a smooth, rich, and authentic cup.
