Fudge is a delicious English delicacy that can be gifted, and vanilla fudge has a traditional flavour that is loved by young and old alike. The fragrance of vanilla is well-known for being comforting and, together with cinnamon, vanilla is a very popular soothing scent. That is also why it is so common in the perfume industry. The calming effect of the fragrance of vanilla is apparently due to the fact that the scent closely resembles that of breast milk.

Fudge is a sweet and soft treat made from butter, sugar and milk or cream. Unlike toffee or caramel, fudge has a tender and fine-grained texture. It takes true craft to make good fudge, and genuine traditional fudge is always hand-made and comes from England.

To make fudge the sugar is heated to no more than 116 °C in a large copper pot. A sugar thermometer is indispensible, because the higher the boiling point the harder the fudge (if it is too hard it will no longer be fudge, but toffee or caramel. When making hard caramel the boiling point of the sugar can reach 150 °C).
Once the sugar is boiled it needs to cool down. While cooling the sugar syrup is carefully beaten with a whisk to stop it from crystallising. If it is over-stirred the crystallisation can actually accelerate, something the fudge-maker wants to avoid at all costs. Crystallisation results in graininess, and the smaller the sugar crystals the more fine-grained and creamier the fudge will be. Butter is added during this final phase, giving the fudge a gentle flavour and inhibiting the sugar from crystallising.
Devon Cottage Organic Fudge has been making fudge for over 20 years in its ‘Fudgery’ in Cheriton Bishop near Exeter, where they have transformed a small studio into a genuine ‘Fudge Kitchen’ where they use a streamlined system to make their English fudge by hand.
In recent years this British company has focussed on making fudge without palm oil or shortening and only using organic and Fairtrade ingredients. The butter and clotted cream are sourced from local organic dairy farms such as Riverford Farm Dairy, Ashclyst Farm Dairy and Yeo Valley, while the other ingredients are all also organic and, when available, certified Fairtrade.
