Farro is an ancient grain that grows in Umbria, a region in Italy where Farro has been known since Roman times. Like the Celts, Egyptians and Etruscans. It contains three times as much fiber than conventional pasta. During cooking, the delicate aroma of roasted hazelnuts and grilled eggplant with aromas of freshly baked bread, roasted peanuts and sweet red dates is created.
Although farro is rich in nutrients and contains protein, vitamins, amino acids and mineral salts, it is easily digestible. Farro looks a lot like spelt, but is actually slightly different. Modern wheat is called triticum aestivum; spelt triticum speltta and farro triticum dicoccum.
Monograno Felicetti uses italian organic Dicoccum Spelt. Available on the basis of Farro are: Penne Rigate, Spaghetti, Rigatini, Fusilli, Linguine and Ditalini.
