Thanks to a simple coconut hand press, a smart invention of Dr. Dan Etherington, the villagers can manually squeeze coconut oil without electricity. With his retirement coming up, the university asked him for his expertise as an agricultural economist for one final project. His mission was to study the agricultural opportunities of the poor Solomon Islands and to formulate proposals and ideas to improve the quality of life of thousands of villagers. In 1997, the coconut oil hand press became a fact and with a feeling of euphoria, Dr. Dan saw the islanders produce their own coconut oil without needing electricity.
