Frédéric Marr, also known as the Prince of Raw Chocolate, had been working in the food industry for 10 years when, on one of his travels, he came into contact with the shamans of the Shipibo people in the Amazon rainforest. They introduced him to the culture of raw chocolate and how to process it.
In 2005, he met Poppy Smadja on a trip to the United States, who was making all sorts of goodies with raw cocoa and without too much sugar. At "Raw & Fine" in Brooklyn he came across the bean-to-bar concept and the floodgates opened.

Back in France, not a single chocolatier showed interest in making chocolate bars from raw chocolate. Frédéric then decided to do it himself. In order to achieve his dream, he had to modify existing equipment and make some new himself in order to process the cocoa the way he wanted. If raw cocoa is finely ground, it is much more dense than conventional chocolate. But after several rounds of tests, Rrraw chocolate saw the light of day!

Rrraw: highest quality raw chocolate

Rrraw chocolate has more cocoa than conventional chocolate. The taste is more intense and herbal. The chocolate has a lasting, pleasant aftertaste, and does not leave a greasy sensation in the mouth, like other chocolate made from dairy products sometimes does. It is also less sugary and sweet. This chocolate is not bitter, thanks to the special fermentation process and because the beans are not roasted.

Raw chocolate, a healthy snack?

The advantage with raw chocolate is that it is brimming with vitamins, minerals, antioxidants, flavonoids and theobromine. These substances are very healthy and that is why raw chocolate is also considered a superfood. In conventional chocolate production, the cocoa beans are roasted, as a result of which many of the antioxidants are lost. They don't roast the cocoa beans at Rrraw. Eating a piece of Rrraw chocolate is therefore a feast for your taste buds and a healthy snack.
