Dried seaweeds or macro-algae: high-quality food and meat substitute
Seaweeds or macro-algae contain thirteen vitamins, twenty amino acids and sixty trace elements, including the essential elements iodine and sodium. Seaweed is also low in calories, contains extremely little fat and is a source of high-quality protein and calcium. In Korea and Japan, this sea vegetable has become an indispensable part of the kitchen. Logical, because algae also contain the valuable fatty acids EPA and DHA, are rich in umami flavour, very versatile in use and very tasty. Because seaweed is so rich in proteins, iron, iodine and essential amino acids, it is also called the meat substitute of the future.
More than 10,000 different seaweeds and algae
Some edible types of algae are:
✔ Sea lettuce : green algae that grows all over the world. Recognizable by the thin, transparent and bright green leaves.
✔ Kombu : this savory seaweed is the seasoning for a Japanese stock. Also for stir-frying or for tea.
✔ Nori : a combination of different red seaweeds, which are sold in sheets and used for e.g. sushi
✔ Z eespaghetti : strands are well up to three meters lang.Gebruik as spaghetti or noodles.
✔ Wakame : sweetest (brown) seaweed. Tastes good in a salad, soup and rice dish.
✔ Codium/felt seaweed : a firm green seaweed with tubular twigs, with a full and intense sea flavour.

In mid-2018, Spanish Cristina García founded La Patrona , a company that grows organic seaweeds in the Rías Baixas, a coastal region in southern Galicia. The algae are gently cut off, leaving the rhizoid (root) so they can continue to grow. The seaweed population is always partially left intact. The products are packed in compostable packaging and are dried below 40°C. The range consists of: Kombu , Wakame , Sea lettuce , Sea spaghetti , 3 Algae mix , Codium and Alganesa (= seaweed mayonnaise).
