What is pesto?

Pesto is an indispensable seasoning in Italian cuisine. It is a mixture of basil leaves, pine nuts, olive oil, Parmesan cheese, garlic and sea salt. These are carefully crushed in a mortar so that all the aromas are released and can mix. Hence the name pesto. This means 'pounded' in Italian.

Pesto is often eaten with pasta, but is also delicious with chicken and vegetable dishes, with salads or as a spread on a healthy sandwich or chicken sandwich.

Red pesto is made with sun-dried tomatoes instead of basil. The taste is just as spicy as that of green pesto, but with a sweet touch of tomato. There is also plenty of experimentation with pesto. Today there are also pestos based on bell pepper, kale and wild garlic. Finally, there are several vegan pestos . These have omitted the Parmesan cheese from the original pesto recipe from Genoa or replaced it with, for example, cashew nuts.
