Activate and heat up your senses with this recipe for delicious Thai red curry with coconut and seitan.
1 (small) jar Thai red curry paste
1 can coconut milk (400 ml)
400 g vegetables (your choice)
1 Veggie Protein Bloc 550 g
In this curry, okras are used but all vegetables are suitable for this recipe. Carrots, zucchini, eggplant, bell-peppers…
Cut the seitan into cubes.
Add 2 to 3 tablespoons of the curry paste and cook briefly.
After 1 minute, add the diced seitan. Sear the seitan.
Cover with the coconut milk.
Add the vegetables and simmer on a low heat, until the sauce has the desired thickness and the vegetables are cooked.
Optional: Serve with whole grain rice and an exotic salad.
