Tomato sauce Ortolana: Italian pasta sauce with eggplant, zucchini and bell pepper
This refined, authentic tomato sauce is created by slowly stewing organiconions, carrots, celery and garlic inextra virgin olive oil. Tomato pulp andtomato paste are added, along with three organic seasonal vegetables: zucchini, eggplant and bell pepper. Parsley and oregano provide the fresh flavour of a rich homemadesauce, free from additives and sugar.

Pasta with Sugo Ortolana and grilled vegetables recipe
INGREDIENTS
350 gr of fusilli
1 glass jar of Tomato Sauce Ortolana
1 zucchini, sliced
1 eggplant, sliced
1 red bell pepper, cut in quarters
75 gr of rocket
3 tbsp pine nuts, roasted until golden brown
Parmesan cheese, grated
Extra virgin olive oil
PREPARATION
Spread the vegetables across two baking sheets lined with parchment paper. Cover them with a thin layer of olive oil, sprinkle them with sea salt and place the baking sheets in the middle of the oven. Grill for 8 to 10 minutes, flip the vegetables over (sprinkle some extra olive oil on top) and grill for another 8 to 10 minutes.
Cook the pasta al dente in a large pan. Drain the pasta, then put it back in the pan. Add the Tomato Sauce Ortolana to the pasta and reheat it while mixing the ingredients. Plate the pasta and grilled vegetables on two plates and garnish it with some rocket, pine nuts and Parmesan cheese. Drizzle some extra virgin olive oil over the pasta and serve.
