Sea lettuce ( Ulva lactuca ) from La Patrona is a light green, transparent alga that is harvested from September to October in Rías Baixas, a coastal region in southern Galicia. The algae species Ulva Lactuca contains a relatively large amount of protein, iron, calcium, magnesium, manganese, potassium, silicic acid and vitamins A, B and C. Due to natural drying at a low temperature (below 40°C), sea lettuce retains its structure, color and high nutritional value.
Sea lettuce has a fresh and strong taste, which resembles sorrel and the sea. Finely chopped, this type of algae is ideal for mixing with sauces, creams, rice dishes and risottos. Fried or sautéed in sesame oil, sugar and salt. Blanched - wrap around fish as papillote. Minced meat on salads or toast. In scrambled eggs, croquettes, pies. Blended into smoothies or juices.
The various seaweeds are harvested by hand in the Galician estuaries, washed, dehydrated and packed by La patrona in biodegradable packaging, free of plastic. Harvesting is done on foot or by diving at a shallow depth and using a boat. The algae are cut off, leaving the rhizoid (root) so they can continue to grow. This seaweed is fully certified organic.
