Sea spaghetti from La Patrona: dried seaweed from Spanish coastal waters

Sea spaghetti ( Himanthalia elongata ) from La Patrona is an olive green and brown algae that is harvested from March to about June in Rías Baixas, a coastal region in southern Galicia. Due to natural drying at a low temperature, the seaweeds retain their structure and colour. Sea spaghetti is high in protein and fiber and low in fat. This type of algae is also rich in potassium, calcium and iron (almost ten times more than lentils) and contains antioxidants.

Sea vegetables with a soft texture and taste: for the novice algae eater

Once cooked to soften, it is ideal for use in fillings, scrambled eggs, tortillas, pizza, etc. You can also fry the algae in a drizzle of olive oil and serve with legumes, salads, grains or pasta. Cooking tip: Boil the sea spaghetti in water and then let it steep in soy sauce. This way you can keep the sea spaghetti for a few days and use it to enrich dishes. Due to its taste and soft texture, this sea spaghetti is ideal for people who have little experience with algae.

Use

Soak in lukewarm water for 10 minutes or boil for 20 minutes.

How to cook:

Once rehydrated, use it as a fresh vegetable.
Use it as if it were pasta with a sauce. The cooking water brings a lot of flavor to stews, soups, sauces, creams. Once cooked (to soften), it is ideal to use in fillings, scrambled eggs, tortillas, pizza etc.
