Kalamata olives, the most famous of the Greek olives and a true delicacy

Tender and extraordinarily aromatic almond-shaped kalamata olives are named for the southern Greek region where they come from. Only olives from that area may be sold as kalamata olives, and the mineral-rich stony ground, the plentiful sunshine, the aridity and the strong winds all contribute to the large olive fruits developing their juicy flesh and crisp shells. 

The trick lies in plucking kalamata olives at exactly the right time, which must be performed by hand to prevent bruising. By this stage they have lost their green colour a long time ago, and have now taken on a purplish hue. Shortly after being plucked, the second ripening phase starts, when they are pickled and layered in wine vinegar, lemon and oil, softening the meaty olive and giving it that delicious texture. They are the most famous of the Greek olives and their rich and sunny favour make them a true delicacy.
