Cinnamon Ceylon: warming and mild spice

Indispensable in every kitchen!! Although cinnamon evokes associations with homely warmth and winter scenes, this spice really comes from the bark of the cinnamon tree, which originally grows in Ceylon; present-day Sri Lanka. The bark is peeled, dried and then used as a spice. Ceylon is milder than its close relative, cassia cinnamon. Cinnamon can be found in rice puddings, compotes and cakes, but also in Arab, Ethiopian and Indian dishes. Delicious!
