Manuka honey is made from the flower nectar of the South Sea myrtle (Leptospermum scoparium) , a wild-growing tea tree plant found exclusively in New Zealand. The Manuka is a hardy tree that thrives in the mountainous areas of New Zealand. The honey is only cold-blown and never exposed to temperatures above 39°C, in order to retain all valuable nutrients.

The TA factor is a value used as a quality index for honey. Sonnentors' Manuka Honey has an activity factor of 25+. The TA value indicates the peroxide activity. The peroxide activity describes the activity that results from the natural presence of hydrogen peroxide (H2O2) in honey. The non-peroxide activity, on the other hand, describes the activity that is due to the natural enzymes present in the honey. The TA factor is measured in steps of eg: TA10+, 15+, 20+, 25+ and is considered the only evaluation that cannot be manipulated.
Sonnentors' Manuka Honey comes from the beehives of their partner Bernhard Schneider from a nature reserve in New Zealand. Together with the indigenous people of Zwettl, they protect and cultivate valuable Manuka trees here, which supply the bee colonies with the nectar. Bernhard Schneider is the only organic beekeeper in a radius of 45,000 hectares. In total, he has 732 hectares of land for honey production, 300 hectares of which are part of his reforestation program. This project not only produces delicious honey: by planting (and preserving) trees, large amounts of CO2 are also compensated.
