What is maple syrup?
Maple syrup is actually a very simple, natural product, natural sap from the maple tree. These trees' roots are full of sugar in the winter. In the spring, the sugary sap is tapped from the tree's trunk.
It was Native Americans in North America who were the first to tap the sweet sap from the trees and turn it into a non-perishable syrup. The technique for making maple syrup has actually stayed the same and is completely natural and organic.
More than 80% of the world's supply of maple syrup is produced in Canada.
Different degrees of maple syrup
Maple syrup is available at different qualities, from grade A to grade C. This quality indication describes the clarity and taste of the syrup.
- Grade A maple syrup comes from the first tapping, at the start of spring, and is light brown.
- Grade C maple syrup is dark brown and has a stronger caramel flavour. Grade C is harvested towards the end of the season and contains the most minerals.
Is maple syrup a healthy sweetener?
Maple syrup is a natural sweetener and does contain some sugar, but less than pure sugar. By comparison, maple syrup contains only 2/3 of the sucrose that's in granulated sugar. That means that 100 grams of maple syrup contains 67 grams of sugar. Or, to put it another way, by using maple syrup, you're cutting your sugar intake by a third.
Maple syrup also contains quite a few antioxidants and plenty of minerals, primarily zinc and manganese.
When you buy maple syrup, make sure you're buying real maple syrup, not just maple-flavoured syrup. That kind of syrup is often full of refined sugars or fructose-glucose syrup.
