Butternut squash puree from fresh organic butternut pumpkins from Bio Orto

This delicious orange sauce is made from fresh butternut squash from Apulia, and is pureed immediately after harvesting with just a few simple ingredients. The result is a velvety puree that tastes deliciously sweet and nutty.

Surprising organic pasta sauce of Butternut squash

The creamy sauce is ideal to use as a surprising pasta sauce but of course also delicious for a Dutch stew with an Italian twist. Try this sauce for pasta, lasagna or risotto. Nice to combine with goat's cheese or ricotta!

Recipe butternut squash lasagne

INGREDIENTS

350 gr butternut squash puree
400 gr fresh spinach
olive oil
pinch of salt and pepper
1 gr container of ricotta a 250
1 egg
shredded cheese
1 teaspoon sage
1 clove garlic
2 tomatoes
9 lasagna sheets

PREPARATION

Bring a pan of water to the boil and add the fresh spinach for 1 to 2 minutes until it starts to shrink. Drain it and squeeze out as much liquid as possible with a spoon. Beat the ricotta with the egg and a pinch of salt and pepper. Meanwhile, also slice the tomatoes.

Grease an oven dish with a little oil. Start with a layer with half of the ricotta mixture and divide half of the spinach on top. Cover with lasagne sheets. Spread half of the Butternut pumpkin puree and tomato slices on top and cover again with lasagne sheets. Repeat these layers again. Sprinkle the top with some cheese and put in the oven for 30 min at 200°.
