The pomodoro, the 'golden apple' of Italian cuisine, is an elongated red plum tomato, resembling a plum in shape. The organically grown tomatoes are both picked, selected and processed on the day of harvesting to guarantee freshness and flavour.

This firm, fleshy tomato with a full-bodied, sweet flavour is also known as a Roma tomato and is suitable for direct consumption, as well as for stewing and stir-frying. Delicious as a base for sauces, soups and salads. Aside from the sultry Italian sun, the only ingredients are fresh water and a pinch of salt. Tomatoes are rich in minerals, vitamins A and C and lycopene, a powerful antioxidant.

Tomato and bell pepper soup recipe

INGREDIENTS (6 bowls)

750 gr of plum tomatoes
1 jar of grilled bell peppers, drained
15 gr of basil
2 onions
1 clove of garlic
140 gr of tomato paste
500 ml water
Goat's cheese as garnish
A dash of extra virgin olive oil
Salt and pepper

PREPARATION

Finely chop the onions, mince the garlic and sweat them in a frying pan. Wash and dice the tomatoes and add them to the garlic and onions. Drain the bell peppers and add these as well. Stir well. Cut the stalks off the basil and add them to the soup. Set the basil leaves aside for later. Now add the tomato paste and the water and season with pepper and salt. Let the soup cook over a low heat for 10 minutes. Add the basil leaves, but keep a few aside for garnish. Puree the ingredients into a velvety soup. Spoon the soup into soup bowls and garnish it with the goat's cheese, basil leaves, some virgin olive oil and pepper.
