Mani combines green and kalamata olives with chili and herbs such as basil, thyme, oregano and rosemary to create an ambrosial speciality. The fresh and tangy flavour and the southerly aromas of the herbs will evoke fantasies of a holiday in the Greek sun! Kalamata olives, the most famous of the Greek olives
Kalamata olives are naturally sun-ripened on the tree, giving them their characteristic purplish hue, and they are harvested by hand to protect the fragile fruit. Mani believes in quality rather than quantity, and their delicious kalamata olives are firm, tasty and they stand apart thanks to their characteristic colour and almond shape.
Mani: a true delicacy among Greek olives
MANI’s green table olives are grown on the island of Euboea, to the north of Athens. The farmers focus on quality instead of quantity and they carefully harvest by hand the large, juicy olives with their fleshy fruit and small pits.
The perfect conditions in the Greek Mani region are to olive oil what terroir is to wine, and a unique flavour and quality characterise the products originating from this area. The olives are harvested and debittered by hand, with the debittering performed using a natural and traditional method that employs brine and sea salt. After fermenting for six months, the olives are vacuum-packed in glass jars, giving them their surprising and full-bodied flavour.
