Sauces and seasonings spice up your food

A condiment is something that you add to your food, after it has been prepared, to give it more flavour or to enhance the flavour. By condiments we mean sauces such as ketchup, mayonnaise, mustard, soy sauce, worcestersauce, sambal, chutney, marinades and dressings or spiced vinegar. Pepper and salt are not condiments because they are not prepared according to a recipe.

We use condiments as seasonings to complete the pallet of salt, sour, sweet, bitter and umami. Our taste buds yearn for these five flavors. A dish gives us satisfaction and is successful when we taste all these flavours. Sauces often contain salt and umami flavor.

Taste enhancers can also help with digestion. Vinegar (vinaigrettes and dressings) makes fibres from vegetables and meat easier to digest. Mustard can neutralize bad substances in food, such as nitrite.

Finally, sauces also add extra texture and colour to your plate. This also stimulates your appetite.
