Kuzu white: 100% organic, vegan and gluten-free binder from TerraSana
Kuzu is a pure vegetable binder that is made from the starch of the kuzu plant. It has a neutral taste and is also good in sour dishes, in contrast to, for example, corn starch. It is seen as a luxury binder in the Japanese kitchen, w, because it gives a silk-like, creamy texture to soups, sauces and hot desserts, and gives a shiny effect as well.

What they have in common is that all three are vegan and gluten-free binders that are frequently used in the Japanese and macrobiotic kitchen. The only difference is that they come from different plants. Arrowroot and kuzu are both from a Japanese root, but from 2 different plants: the kuzu plant and the arrowroot. Agar agar is a red seaweed extract.
Kuzu massages your intestines

Recipe for kuzu ginger drink
Ingredients:
- 250-300 ml cold water
- 1 tbsp kuzu
- 1 tbsp rasped ginger
- 1/2 - 1 tbsp tamari
Preparation:
Put the water in a pan with the kuzu and stir with a whisk until the kuzu is completely dissolved. Add the ginger and heat, stirring over medium heat, until the liquid is gelatinous and clear. Add soy sauce to taste and pour it through a sieve into a glass. Let it cool a little before you drink it. See it as an alternative to a cup of broth, one that gives you a boost AND is good for your intestines.
Use about 10 grams of kuzu for 500 ml of liquid. Add about 2 tbsp of water and stir into a creamy paste. Once the liquid is properly heated, add the paste and continue to stir well. The mass will thicken.
