Black lemon is one of the favourite ingredients of the Israeli-British chef Yotam Ottolenghi. He is a big fan of its intensely refreshing and sweet flavour. For instance, Ottolenghi adds a whole black lemon to the water as he cooks rice dishes and stews or a broth for soup. The lemon can also be finely ground and used in chicken marinades or sprinkled on top of grain salads. It is also available as a powder.
