Organic black rice noodles: enjoy gluten-free Japanese cuisine
These gluten-free rice noodles are made from organic black rice, which gives your Asian dish a special purple-black colour. Delicate in structure, they fit perfectly with the savoury umami flavours of Japanese cuisine . This typical Oriental pasta is easy to digest and versatile in use. They are delicious with anything from a fresh, light lemon sauce to a firm, oriental peanut sauce. Add these delicious noodles to a combination of miso, shoyu and shiitake and finish it all off with quick-stir-fried vegetables. Ready in 5 minutes!
Noodle recipe with shiitake and nori
Ingredients:
- 2 portions black rice noodles
- 5 g organic arame
- 1 sheet sushi nori
- Black sesame seeds for garnish (optional)
For the sauce:
- 1 shiitake (koshin)
- 3 red onions
- 250 g chestnut mushrooms
- 1 large tbsp sunflower paste
- 1 large tsp genmai miso
- 1 small tsp ume paste
- Ca. 300 ml water
- Splash of sake to flambe
Preparation:

Let the arame soak in cold water for 5-10 minutes. Cut the norivel into small pieces. Finely chop the red onions and fry them in a frying pan lightly sprinkled with oil for 2-3 minutes, until glossy. Cut the shiitake into small pieces and cut the chestnut mushrooms into slices. Add and fry until golden brown in 3-5 minutes.

Boil the noodles in a pan with plenty of boiling water for 3-4 minutes. Drain and rinse with cold water. Mix the sunflower paste, genmai miso, and ume paste together in a glass. Fill the glass with water and mix everything together into a smooth sauce. Extinguish the onions and mushrooms with a splash of sake. Continue to stir. Turn down the heat.

Drain the arame and rinse with cold water. Add the arame and the miso sauce to the mushrooms. Let it boil gently until the sauce thickens. Add a glass of water if necessary and let it boil down. Divide the noodles evenly among the plates. Divide the mushroom sauce over each of the servings and garnish with the pieces of nori and black sesame seeds.

Use | Bring a pan of water to the boil. Add the noodles until they are completely soaked in the water. Bring to a boil again and then reduce the heat to half power. Let boil for 4-5 minutes. Drain the noodles in a colander and rinse with cold water. |
